Asiago Cheese
Asiago cheese is a cow’s milk cheese that originates from the Asiago Plateau in northern Italy. It comes in two main varieties:
Asiago Pressato (Fresh Asiago) – A mild, smooth, and slightly tangy cheese with a soft texture. Aged for about a month, it has a creamy, slightly sweet flavor.
Asiago d’Allevo (Aged Asiago) – A firmer, sharper cheese that ranges from mildly nutty (Mezzano, aged 4–6 months) to intensely sharp and crumbly (Vecchio or Stravecchio, aged up to 2 years).
Uses
Asiago cheese is versatile and can be used in:
Sandwiches and paninis (Fresh Asiago)
Grating over pasta, soups, and salads (Aged Asiago)
Cheese boards with fruit, nuts, and honey
Melting on pizzas, casseroles, or risottos
